Easy Chickpea Curry Recipe for Camping (That Actually Tastes Amazing)

Curry Rice and Nann Dinner

AI, because my kitchen is not photo ready after I cook anything

The Curry That Saved Dinner

(And Possibly My Sanity)

Let's be brutally honest for a second.

When most of us say, "I'm going to cook something new tonight," what we actually mean is, "I'm going to stand in front of the open fridge until the cold air makes a decision for me. If it doesn't...I'm ordering pizza."

Cooking in an RV takes that challenge to a whole new level.

Trying to channel your inner Gordon Ramsay when your kitchen is roughly the size of a generous shoebox is an experience all its own. A shoebox that fights back. Every time you turn around, you're elbowing a cupboard, bouncing off the sink, or questioning every life decision that led you to this exact moment.

I'm fairly certain Gordon has never filmed an episode of Hell's Kitchen where a contestant accidentally hip-checked their own coffee maker while plating dinner.

I have.

But this time something spoke to me.

Actually...

Two things.

The first was a dusty can of chickpeas that had been sitting in the cupboard long enough to qualify for a pension. Possibly a pension and a retirement party.

The second was my stomach, cutting through the silence with all the urgency of an emergency broadcast.

"Buddy. You cannot survive on granola bars and cold coffee forever. This is not a drill."

So, during one of those rare moments of culinary optimism—the kind that appears about twice a year, usually under a full moon—I decided to make curry.

Not fancy restaurant curry.

Not the kind where you toast whole spices while casually mentioning you're "blooming the aromatics" after Googling what that means twelve seconds earlier.

I'm talking real-life curry.

The kind you make after a long day of camping.

The kind that comes together when your brain has melted in the summer heat, your dog is giving you the "are we EVER eating?" stare, and your partner is texting reminders about things you forgot before they even hit Send.

And let me tell you...

This one absolutely rocks.

The Backstory (Or: How I Accidentally Became a Chef)

Picture me standing in the RV kitchen, trying to create dinner using little more than optimism and whatever had been bouncing around the cupboards since crossing the last provincial border.

Meanwhile, Checkers—my dog, my self-appointed sous-chef, and my harshest food critic—was supervising from the floor.

He contributed absolutely nothing.

But the second a crumb touched the floor...

Olympic-level speed.

I remembered seeing an easy chickpea curry recipe online.

One of those beautiful recipes with magazine-quality photos and an ingredient list clearly written by someone whose pantry has its own organizational system.

Then I looked in my cupboards.

Time for Plan B.

Salt?

Gone.

Sacrificed to lunchtime fries.

No regrets.

Garlic?

Missing in action.

Last seen during a previous culinary experiment.

Curry powder?

Nope.

Apparently I buy everything except the ingredient I'm planning to use.

Vegetable stock?

I'm still not convinced that's a real thing.

I assume it's just water that once met a carrot.

Honey?

Sweet enough already.

Also...

Didn't have any.

But sitting quietly in the back of the fridge was one lonely jar of red curry paste.

Patiently waiting.

Silently judging me.

Today was finally its day.

And honestly...

This turned out to be one of the easiest, tastiest meals I've made in the RV.

Easy Chickpea Curry Recipe

Serves

4 normal people...

Or two campers who skipped lunch.

Ingredients

  • 2 cups basmati rice
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2–3 tbsp red, yellow, or green curry paste
  • 2 cans chickpeas, drained and rinsed
  • 1 can coconut milk
  • Splash of Sriracha or pinch of red pepper flakes (optional...but spiritually encouraged)
  • Warm naan
  • Cilantro (optional)

How to Make It

Step 1 – Cook the Rice

Basmati Rice

You know the drill.

Water.

Rice.

Heat.

Hope.

Directions are on the bag...

Or in your heart if you've made rice more than once this decade.

Step 2 – Caramelize the Onion

Heat the oil and cook the onion low and slow until it's soft, golden and smells like someone who definitely has their life together.

This takes about 10–15 minutes.

Coincidentally, that's also how long Checkers can maintain intense eye contact before dramatically flopping beside his food bowl.

Step 3 – Add the Curry Paste

Mild Curry Paste and an Onion

Stir it into the onions.

Let it sizzle.

Let it become fragrant.

Take a moment to feel like a professional chef.

Try not to narrate your own cooking show.

(I narrated mine. Checkers remained unconvinced.)

Step 4 – Add the Chickpeas and Coconut Milk

Coconut Milk and Chick Peas

Add the chickpeas.

Pour in the coconut milk.

Watch everything magically become creamy, rich and delicious.

You absolutely didn't plan this.

But it certainly looks like you did.

Step 5 – Simmer

Let everything simmer for about ten minutes.

Warm the naan.

Reflect on your accomplishments.

Question your life choices.

Dealer's choice.

Just don't forget to come back before it burns.

Step 6 – Eat

Serve over rice.

Add naan.

Throw on cilantro if you're trying to impress someone.

Accept compliments like this happens every night.

Why This Easy Curry Recipe Works

It's fast.

By the time you've talked yourself out of making dinner...

It's finished.

It's inexpensive.

Considering campground fuel prices lately, your wallet deserves a break.

It's forgiving.

Forgot an ingredient?

Doesn't matter.

Added too much curry paste?

Congratulations.

Your sinuses have never been clearer.

Used the wrong curry paste?

That's not a mistake.

That's fusion cuisine.

Own it.

Most importantly...

It's delicious.

Creamy coconut milk.

Warm curry.

Tender chickpeas.

Comfort food doesn't get much easier than this.

Final Thoughts

If you're standing in your kitchen—or your RV—wearing one sock, staring into a cupboard that's refusing to inspire you...

Take this as your sign.

You don't need a perfect recipe.

You don't need twelve exotic spices.

You don't need to drive 45 minutes to the campground store for a hot dog that's clearly seen things and would rather not discuss them.

You need one can of chickpeas.

One can of coconut milk.

One jar of curry paste.

And just enough confidence to say...

"Good enough. Let's eat."

Checkers approved, Well the rice only, he's not a curry lover.

And his standards are surprisingly high.

If you give this curry a try, let me know in the comments. I'd love to hear what ingredients you swapped, what you forgot, or what accidental masterpiece you created. Bonus points if you cooked it in an RV, dropped half your dinner on the floor, or had a four-legged quality-control inspector waiting patiently beneath the cutting board.

Because real cooking isn't about following recipes perfectly.

It's about making something delicious with what you've got.

...Although the curry paste definitely deserves some credit too.
